History
Marcelo and Emma, your hosts, welcome you in the old manor house on the family property. We are the fourth generation of German settlers, still preserving the furniture, utensils and graphic heritage (books, documents and photographs) that once made our ancestors useful. Along with this, we preserve a small archaeological sample of the ancient indigenous inhabitants of the area who lived in the 1600s, found on our lands.
We rescue the gastronomy of the 19th century brought by the ancestors, such as the preparation of preserves, jams, homemade bread, vegetable gardens and all the delicacies of the old recipes of the time.

The term sustainable tourism emerged in the 90s, as an immediate response to the environmental impact that was evidenced by the increasing traffic of travelers.

We are a hostel aware of the environment it has and how important the environment is for us as a tourist destination, so the fundamental objective of our activity is to offer the best facilities and services with the least possible environmental impact. That is why we publicly commit ourselves to being an example in complying with the principles of Sustainable Development.

To carry out this important work, the environmental variable is incorporated into all our processes such as the planning of new improvement projects, provision of a service, etc., which allows them to be carried out with the minimum possible environmental and social impact, guaranteeing environmental quality, economic progress and conservation of natural values. Another aspect that we take into account for the development of our activity is the sociocultural, since we understand that our tourist destination is enriched by the culture, traditions, gastronomy and idiosyncrasy of its people, that is why it is essential for us that all our clients get to know it and experience it.
All this makes Hostal La Posada del Colono establish a commitment that responds to social and environmental demands that guarantee sustainable development based on the following principles:

- Rationalize the consumption of energy and natural resources, through energy efficiency and the use of renewable energies.

- Maintain a Management System in accordance with our sustainability and quality policy, making sure to control and evaluate its degree of compliance.
- Show our Sustainable Management System to our suppliers, subcontractors, employees, clients and society in general, urging them to follow the model.
- Raise awareness and properly train all hotel employees on a continuous basis, through courses and training programs related to improving quality and the environment.
- Provide our clients with information related to our principles on Sustainable Development and the management we carry out to preserve the environment and local culture.
- Systematically assess the impact of the hotel's activity on the destination, establishing a process of continuous improvement of environmental, economic, social and customer satisfaction aspects, based on the objectives and goals set by the Hotel Management.
- Evaluate and periodically update our objectives and goals, as well as review, modify and adapt our Management System to the reality of the establishment and destination.
